Ingredients

  • 15 gms red thai curry paste
  • 1 stalk lemongrass chopped
  • 150 gms boneless chicken diced
  • 1 tsp sugar
  • 8-10 basil leaves
  • 250 ml coconut milk
  • 30 gms diced carrots
  • 30 gms diced mushrooms
  • 30 gms broccoli florets
  • 30 gms cauliflower
  • 2 tbsp oil
  • 1 Kaffir lime
  • 200 ml water
  • Salt to taste

Steps

  • Take a microwave safe glass bowl
  • Add oil and red Thai curry paste
  • Mash with spoon and microwave forl min at maximum temperature
  • Add broccoli florets, cauliflower, diced mushrooms and diced carrots
  • Add boneless chicken slices, basil leaves, kaffir lime, stalk lemongrass chopped, sugar and coconut milk and mix
  • Add water in it and stir it well together
  • Microwave for 5 mins at maximum temp
  • Serve hot with steamed rice or stir fry rice
  • Garnish with basil leaves
